With the summer heat this year reaching record highs, we have found ourselves making dishes and drinks that can cool us down. One of those being this refreshing Watermelon Gazpacho! It really is a celebration of summer because most of the ingredients used are at their peak during the summer (cucumbers, pepper, tomatoes, and watermelon).
Recipe:
Ingredients:
3-4 cups watermelon, cubed
3 medium-sized tomatoes, cubed and reserve 1 T diced for topping
2 mini cucumbers, diced and reserve 1 T for topping
1/2 red bell pepper, cubed and reserve 1 T diced for topping
1 green onion, sliced in rounds
2 garlic cloves, chopped
5-10 mint leaves, reserve and julienne 3 leaves
5-10 basil leaves, reserve and julienne 3 leaves
1/4 cup olive oil
1 TBSP sherry vinegar
2 tsp cumin
salt and pepper to taste
Directions:
Blend watermelon, tomatoes, cucumbers, red bell pepper, green onion, garlic cloves, and mint and basil leaves together. Stop the blender, add sherry vinegar, cumin, salt, and pepper, then blend again. While the blender is going slowly, stream in the olive oil. Give the gazpacho a taste and adjust seasonings as needed. Serve and top with the reserved tomato, pepper, and cucumber mix as well as the julienned herb mix. Enjoy!!
